Executive Chef Michael Clyne

Kellogg Center Senior Executive Chef Michael Clyne was honored by the Michigan Lodging & Tourism Association for 2010 “Culinary Star of the Year Award." The awards were presented during the "Stars of the Industry" awards dinner on Monday, March 21, 2011 at the Radisson Plaza Hotel & Suites in Kalamazoo.

Following is one of Chef Clyne's favorite recipes.

These cookies are easy to prepare and guaranteed to get your salivary juices flowing! Fill them with cinnamon ice cream from the MSU Dairy Store for the perfect ice cream sandwich.

Molasses Spice Cookies

2 1/4 c. Flour
2 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 tsp. Cinnamon
1 tsp. Ginger
1/4 tsp. Allspice
1 1/2 Stick Butter
1/2 c. Sugar
1 Egg
1 tsp. Vanilla
1/3 c. Molasses
Extra Sugar & Nutmeg for Rolling

1. Mix Flour, baking soda, salt and spices.
2. Cream butter, brown sugar and half cup sugar.
3. Add egg, vanilla and molasses.
4. Add flour and mix.
5. Mix 1/3 cup sugar with 1/2 tsp. nutmeg.
6. Scoop dough and roll into ball shapes.
7. Roll in the sugar nutmeg mix.
8. Place on a grease-proof paper lined tray.
9. Bake 11-14 minutes. Cookies should be cracked.
